Avocado, blueberry and feta salad

Our nutritionist Melinda has been talking about good fats and bad fats.

And as we have learned not all fats are bad.

Here is a great summer recipe for a salad that contains some of those good fats like avocado, feta cheese, grape seed oil and pumpkin and sunflower seeds.

It also happens to be delicious and simple to make.

Ingredients:

6 cups mixed lettuce greens ( I’ve used Spring Mix or combined romaine, kale and spinach)

1 cup blueberries (from our garden!)

½ cup crumbled feta

2 avocados, peeled, pitted and sliced

2 Tbsp toasted pumpkin seeds

1 lemon, juiced

2 Tbsp grape seed oil

3 Tbsp white balsamic vinegar

2 tsp honey

salt & pepper, to taste

 

Directions:

Plate greens. Add blueberries, avocado, cheese and seeds. In a measuring cup, combine oil, vinegar, lemon juice, honey, salt & pepper. Whisk until smooth and honey is blended. Drizzle dressing over plated salad. Serve & enjoy!
