Just peachy

If you’re lucky enough to be heading to the Okanagan this summer you’ll know peaches are starting to hit fruit stall shelves.

And who doesn’t LOVE peaches?! Packed full of vitamin A and vitamin C, this summer-time treat also makes a great healthy snack.

Our friends at Restaurant 62 know how to capitalize on a good thing, serving up this delicious recipe for crepes with maple roasted peaches. That’s right – maple roasted peaches!

Crepes

1 egg

1 cup milk

3 tbsp flour

1 tbsp sugar

1 tsp vanilla extract

Whisk together until smooth. Let rest at least ½ hour before using (overnight is best). To cook, pour a small amount at a time into non-stick pan.

Maple Roasted Peaches

Halve peaches, drizzle with maple syrup and butter and bake in 375 F convection oven for 8 minutes or until browned.

To serve, roll the crepes with Vitala vanilla yoghurt and peaches and top with freshly toasted coconut. Garnish with fresh mint.
