After school snacks that are not just for the kids…

At risk of giving the kids ideas that they will get such a delicious after-school snack everyday, we’re sharing this delicious after school kids snack idea from our friends at Restaurant 62.

What a great way to welcome them home after their first day back, either after the strike, or maybe just the weekend 😉

The best part is, they suit grown-up taste buds too!

 

Pancetta Cups with Ricotta

200 g sliced pancetta (Italian bacon)

3/4 cup ricotta cheese

1 tbsp chopped fresh basil

Zest of one lemon

2 tbsp extra virgin olive oil

sea salt and fresh ground black pepper to taste

Ripe cherry tomatoes for garnish

 

Push the sliced raw pancetta into small bake pan molds (tassie size works best) and bake in a preheated 350* oven until crisp and hold their cup shape. Once baked, cool for a few minutes in the pan, then remove.

Combine the remaining ingredients in an appropriate sized bowl and work together gently using a wooden spoon. Adjust seasoning to taste. Fill the pancetta cups with the ricotta mixture. Enjoy!
