Eggs in a pocket

Here’s a new twist on an old favorite.  Not your typical eggs and toast, just as delicious but a whole lot more fun.  Joe had this at a friends and insisted we make it for breakfast one morning.




Cut a hole in bread using a cookie cutter or cup, save cutout for toast.

Place remaining slice of  bread in a lightly buttered frying pan on medium heat.




Crack the egg into the cutout hole.

You can toast the bread cutouts too. We smothered ours in PB & J.

When ready, flip.

Cook egg to desired done-ness.





So simple, so fun.
