Zu-zu zucchini
Anyone who has grown zucchini squash in their back garden can attest that once you have home-grown zucchinis, you have a LOT of them. But when it comes to this stellar vegetable, you can never have too much of a good thing.
Why we love them: zucchini squash is packed full of protein, vitamin A, dietary fiber in addition to being a very good source of B-group vitamins including B6 and riboflavin. It is also a great source of some excellent antioxidants – particularly when you leave the skin on.
How to eat them: zucchini is great raw or cooked. If you’re looking to get the most from your food, they say steaming is the best way to retain zucchini squash’s nutrients. We love it cut into thin strips and used as a light alternative to pasta but you can’t go past a good old fashioned zucchini slice!
When to buy them: fresh locally grown zucchinis are hitting stores now!
