A zucchini odyssey

Following our investment in a bunch of delicious, fresh zucchini for last week’s edition of Know Your Food, we figured we’d make make our moms proud (waste not, want not) and put it to good use. These zucchini fritters were widely exhalted around the office as Hieke’s best creation yet – but then they seem to say that about everything she makes….



  • Two medium sized zucchinis (grated)
  • 1/2 cup chopped green onions
  • 1/4 cup chopped dill
  • 1/2 cup grated parmesan cheese
  • Fresh, cracked black pepper
  • 1 garlic clove, minced
  • Handful of bread crumbs
  • Splash of olive oil
  • Tzatziki Dip



Combine all ingredients in a bowl. Heat some olive oil in a flat-bottom pan. Form small patties with the zucchini mixture in your hands and fry until golden on both sides. Serve with a dollop of Tzatziki,
