After-school snack time – bocconcini Ants on a Log

We are very excited to announce we have partnered with one of our favourite local restaurants, Restaurant 62, to produce an exciting range of recipes to keep you inspired this year.

 

First up, something for the kids. This recipe is perfect as an after-school snack to keep those tummies from rumbling before dinner. Of course, you can always use store-bought balsamic drizzle or if it’s not to your kids’ taste leave it out.

 

Helinda’s youngest Joe, 4, tested this recipe and gave it one-and-a-half thumbs up out of two though he’s a pretty tough judge.

 

Baby cucumber, tomato salsa and Bocconcini ants on a log

 

Hollow seeds from baby cucumbers and fill with diced tomatoes with extra virgin olive oil, sea salt and chopped basil. Top with halved boncoccini ‘ants’. Drizzle with reduced balsamic vinegar.

 

Balsamic Reduction

Yield: 1 L

2 L balsamic vinegar

1.5 cups sugar

¼ orange, halved

½ cinnamon stick

½ tsp each cardamom, fennel, coriander, star anise, cloves

1 tbsp  sea salt

Combine all in large saucepan, reduce by half over low heat, strain.
