An abundance of arugula
A FEW of us here at Vitala Foods like to think of ourselves as green thumbs and thus, have found ourselves swamped in arugula. We’re giving it away to friends and work colleagues and eating it on everything – salads, pasta, even in smoothies. Its peppery leaves are of course, delicious on their own – drizzled with some balsamic and a sprinkling of rock salt.
Why we love it: arugula is a great source of protein, thiamin, riboflavin, vitamin B6 and zinc. It’s also a very good source of calcium, iron, vitamin A and vitamin C.
When to buy it: early summer (as in, right now) is arugula’s time to shine.
How to eat it: raw, on pizza, pasta, in salads or on its own.
Fun fact: arugula, also known as rocket or roquette, is part of the mustard family along with broccoli, radish and cabbage.
