Back to school with blueberry muffins

SINCE TODAY is the first day back to school, we wanted a recipe that would work great for a quick breakfast, a lunchtime snack or even an after school snack. These blueberry muffins could even work as dessert!

 

Blueberry Muffins

 

Ingredients:

 

  • ¼ cup butter
  • ½ cup sugar
  • 1 egg
  • ¾ cup milk
  • 1tsp vanilla
  • 1 ¾ cup flour…we used the Omega 3/flax flour
  • 3 tsp baking powder
  • ¼ tsp salt
  • 1 cup blueberries

 

Directions:

 

Beat the butter and the sugar. Add the egg, milk and vanilla beat well. In a separate bowl combine all the dry ingredients and pour over the wet mix. Stir till not quite combined and then add in the blueberries and finish mixing it all together with a spoon so as not to burst the berries. Prepare a muffin pan and divide the mixture, it should make about 12 muffins. Sprinkle the tops with about ½ tsp of sugar and bake at 400 degrees for 15-20 mins.
