When life gets busy

Our swim club season has begun and that means the swimmers are jumping into the local outdoor pool rain or shine every weekday afternoon (yes, EVERY weekday afternoon) and Swim Meets on some weekends.  This swim season I have 6 swimmers to watch; my baby Joe (not a baby at 5 years old but he’s still my baby) all the way up to my babe, Bill.  My 2 oldest have also taken up water polo this season which potentially means 4 hours at the pool each night. Phew!

With a crazy schedule like that I need some quick and easy dinner ideas and often times that means morning prep.  My new ‘go to’ favorite is a hit with the family, packed with protein, includes veggies and other anti-cancer foods, gotta love that!  Here it is;

Coconut Chicken Curry

INGREDIENTS

2 lbs. cubed skinless chicken breasts
½  cup of sliced onions
2 tbsp. of oil (I use coconut oil)
1/2 tsp of turmeric powder
1 tsp of cumin powder
2 tsp of coriander powder
1/2 tsp of red chilli powder
1″ piece of ginger
1 clove grated garlic
2 cups of coconut milk
½ cup cubed tomatoes
1 sliced red pepper
1 cup spinach

DIRECTIONS
In the morning toss the cubed chicken with 1tablespoon oil and spices and marinate for the day (if you don’t have all the spices on hand just add curry spice).
Heat a skillet with 1 tablespoon coconut oil, brown the onions then add the chicken mixture and cook thoroughly.
Add the coconut milk and veggies and let simmer.
Serve over rice with naan bread.
