Misty’s Mississippi Roast

Misty reminded us this week of the many virtues of the humble crock pot – not least the delicious aromas coming from the farm kitchen while this dish was being created.

This pot roast, which Misty discovered on Pinterest, is so incredibly easy you could make it with your eyes shut. Seriously…

Ingredients

1 beef roast (any size, cut that will fit in your crock pot)

1 packet dry ranch dressing mix

1 packet dry au jus mix

5-10 pepperoncini peppers (depends on how spicy you like it)

5 Tblsp butter

Directions

Put the roast in the crockpot, sprinkle both dry mixes on top place butter on top and then peppers.  Cover and cook on low for 6-8 hours.  Do not add any other liquid, honestly this works out. Slice or shred the beef and I usually serve it with broad noodles, or mashed potatoes and pour the drippings over top.  Enjoy!
