Muffin magic

I don’t usually do this – rave on about a single recipe like this, but I think it’s pretty much the best thing since sliced bread, but without the gluten!

Since I’ve been gluten free, I’ve been on the search for healthy gluten-free recipes.  Unfortunately, a lot of gluten free foods have poorer nutritionals than their gluten-filled alternatives – due to the extra fat, sugar and starch added to compensate for the missing gluten.  I also don’t like having to have on hand uncommon ingredients like xanthan gum and tapioca starch.

I’ve tried a number of gluten free muffin recipes and this is by far my favorite – both from a nutritional perspective and for their taste.  I’ve been told they are the best healthy muffins, which feels like an accomplishment.

The recipe is from “Simply Gluten Free” and is made up of wholesome ingredients, mainly almonds, eggs and applesauce.

I didn’t have almond flour on hand the first time I tried this recipe, so I just ground the almonds up in a coffee grinder which worked quite well.

I substituted the agave nectar with ¼ cup of honey.  You could even cut down on this further if you are watching your sugar intake.
