Serious about squash

That ubiquitous symbol of fall harvest – the squash – is abundant in stores right now.

 

Right now, Nature’s Pickin’s has a lovely selection in lots of wonderful shapes and sizes which are great for photos – even better for eating.

 

Squash is super versatile. Butternuts are perfect for warming fall soups, while spaghetti squash makes a great alternative to pasta or mashed potato when shredded or grated.

 

We love it as its one of the lowest-in-calorie vegetables around. They are also super high in antioxidants, B-group vitamins, vitamin A, folate and fiber.

 

You can also save the seeds and roast them to sprinkle over salads. Seriously, what’s not to like?
