There’s nothing chilly about Hieke’s chili
WE BARELY had time to snap a photo of Hieke’s delicious beef chili before it was totally consumed by the crew here at the farm yesterday.
It must have been just what the doctor ordered on such a chilly (snap!) fall day. This recipe was actually contributed by one of our dairy nutritionists Steve, who cooks it regularly for his brood at home. Hearty, filling and pretty economical too!
Ingredients
1lb ground beef
1 garlic clove crushed
I small onion finely chopped
1 stick celery finely chopped
¼ green pepper finely chopped
Kernels from 1 ear of corn
1 can of chopped tomatoes
I can of tomato sauce
1 can of kidney beans ( I used only ½ a can)
3 Tbsp chili powder
2 Tbsp chipotle sauce
1 ½ tsp vinegar
Salt/pepper to taste
Directions
Combine the beef, garlic, onion, celery, pepper and corn in a large pot and cook over medium heat until meat is browned. Add the remaining ingredients and cook over low heat for about one hour. Serve with a dollop of sour cream and grated cheddar cheese. Enjoy!
