Warm Carrot Salad

I don’t know about you, but sometimes after a long day of work I really don’t feel like cooking dinner. No one really wants to stand over a hot stove on a warm spring/summer day so when I saw this recipe for steamed carrots made in the microwave I got pretty excited. I don’t recommend using a microwave for most cooking if you don’t need to but the fact that this side dish is ready in minutes is amazing.

The original recipe can be found at ChefSteps. We decided to test it out for ourselves to see if it tastes as good as it looks and it sure did! The bowl was empty in minutes and everyone was pleasantly surprised with the unique flavour. I am probably going to be making this at least once a week this summer.

We ended up prepping ours a little bit differently due to unavailable ingredients so here’s what we did different:

– Our carrots were a little more thick so we took the recipes advice and added some cook time. (Make sure you don’t overcook them. You want the perfect soft crunch, not mushy!)

– Instead of seasoning with Chaat Masala we used Cumin.

– We had no plain greek yogurt on hand but had some cream, so we drizzled that over the carrots right after pulling them out of the microwave. I’m sure the yogurt tastes great, but the cream was pretty delicious.

We give this side dish two thumbs up for flavour and another two thumbs up for how easy and quick it was to make!
